Frankie in a Fast- Are you serious?This is the reaction I get when I talk of Vrat Wali frankie.
Let’s go for it! This is the last recipe on the list and I surely want you guys to share with me how it worked for you.
For The Roti (Wrap)
Ingredients:
- Rajgira/Kuttu Atta: 1 cup (You can mix both in equal quantities totally your choice)
- Oil /Ghee: 2 Tsp
- Ginger-Chilli paste: 1 Tbsp
- Boiled and mashed potatoes: ½ cup ( helps to bind the flour and make the rotis soft)
- Dahi: 2 -3 Tsp
- Coriander:finely chopped: Handful
- Pepper: 1 Tsp
- Salt (Sendha Namak): To Taste
Method:
- Mix all the ingredients and knead the flour into a dough. Use a little water to knead the dough. Keep it aside for about 30 minutes.
- Roll into rotis. It is going to be difficult to roll these. So roll on a plastic bag or butter paper.
- This helps to lift the roti. Put the roti on the tawa and Half cook on both sides.
- Keep it aside.
For The Patty
Ingredients:
- Boiled and mashed potatoes: 1 cup
- Paneer( cottage cheese) grated: 1 ¼ cup
- Ginger-Chilli paste: 1 Tbsp.
- Coriander:finely chopped: Handful
- Pepper: 1 Tsp
- Roasted jeera powder:1 Tsp
- Salt (Sendha Namak): to taste
- Lime: ½
- Arrowroot flour: ¼ cup
Method:
- Take a bowl and mix all the ingredients. (Keep ¼ cup grated paneer to garnish the frankie.)
- Add half the arrowroot flour and keep the other half. Mix well.
- Add the lime juice and mix well again.
- Roll into oblong patties. Take the arrow root powder on your palms to help you roll better.
- Once all patties are done, take a skillet or non stick pan and shallow fry the patties in oil or ghee. (I simply brush the nonstick pan with a little ghee and don’t use any oil or ghee later on)
- Flip and cook on both sides till golden brown and keep them aside.
To Assemble:
You will need the pre-cooked rotis, the patties, the green and sweet chutneys we made yesterday, paneer and coriander to garnish.
- Take the half cooked roti on the non stick pan. Apply the green and sweet chutney on it. If you wish, you can sprinkle a little aamchur on it.
- Place the patty in the center, sprinkle the grated paneer and coriander over it.
- Roll from both sides and cook on a slow flame.
Your Vrat Wali Frankie is ready!!!!
