Gingerbread cookies are a Christmas favourite world over. Amongst the many traditional Christmas bakes and goodies, these delectable cookies are our favourite for the holiday season!
These Gingerbread men shaped, spiced cookies with a dominant ginger flavour are made with the goodness of brown sugar, molasses or honey and are decorated with unflavoured white sugar icing in snowflake or star shapes. Perfect christmas cookies to match the Christmas spirit!
You can omit the egg in the given recipe to make an eggless version. I usually gather whole spices and grind them together to make one spice mix which makes it easier to measure and add to the recipe. In case you are making these cookies in any other shape, then you can use food colours to decorate them and make them look prettier.
Gather your child and his/her friends and have a gingerbread men cookie making session; it’s a fun way to get them to learn about Christmas and its stories! After all, what are festivities without friends?

Method
Step 1: Mix flour, all spice powders, baking powder and salt in a bowl. Keep aside.
Step 2: In another bowl, take butter, sugar and honey. Whisk to mix everything well.
Step 3: Add the beaten egg in the bowl and whisk gently. If you are too fast the egg might curdle.
Step 4: Add in the flour mixture and whisk gently to just mix everything.
Step 5: Using your hand, form dough. Cover with a cling wrap and refrigerate till the dough hardens and is good enough to roll.
Step 6: Remove the dough on a floured surface and roll to a 1/4th inch thickness.
Step 7: Cut out cookies using cutters. If using cookie cutters ensure you first dip them in flour and then over the dough, this will prevent the dough from sticking to the cutter and your cookie will come out clean.
Step 8: Place the cookies on a greased baking dish and bake them in the oven for 15 to 20min.
Step 9: Remove the cookies and let them cool on a cloth.
Step 10: Meanwhile prepare the icing by mixing sugar and little hot water in a bowl using a fork. For a cup of icing sugar start by adding 1 teaspoon of hot water to dissolve it. Add more water only if required, the icing has to be thick enough to pipe out.
Step 11: Put the icing in a piping bag or cone and pipe out on the cookies as desired. You can also divide the icing and colour it with edible colours. Get creative!
Store the cookies in an airtight container for not more than a week.
