Spicy, tangy, lip smacking, street chaats are any Indian women’s first love! But, that love soon fades out when the words “diet”, “weight loss”, “fitness”, etc come into her life ☺
While I am no less a sucker for street chaats, at the same time I am quite conscious about my weight too! So to satisfy both my desires at one shot, I am always on the lookout for healthy chaat recipes that I can rustle up in my kitchen in a jiffy. One such find is this healthy Ragda Chaat recipe that has nutritious patties where calorie laden potatoes are replaced by healthy ingredients like Sabudana (sago) and Chole (chickpeas / kabuli chana). Other parts of the chaat have diet friendly ingredients too like fat burners, immunity busters and sugar replacements which make this chaat a guilt free indulgence for chaat lovers.

Ragda Chaat with Sabudana aur Chole ki Patties Recipe
Makes 7 patties
Ingredients
Method
Step 1: Soak sabudana in enough water for about 20 minutes.
Step 2: Meanwhile, mash the chole. It need not be a smooth mixture but mushy enough to form dough.
Step 3: Combine the chole with drained sabudana in a bowl. Mix in the salt, turmeric powder and red chilli powder.
Step 4: Shape the mixture to make patties.
Step 5: Brush patties with little oil, on both sides and cook them on a tawa till the sabudana is cooked. Keep the patties warm for the chaat.

Step 1: Soak vatana (dried peas) in warm water for 1 hour.
Step 2: Later put all the Ragda ingredients in a pressure cooker along with 2 cups of water and cook for about 2 to 4 whistles.
Step 3: Adjust ragda consistency with water as shown in the image. Check for taste.

Step 1: In a heavy bottomed pan, take 2 cups of water. Add in the tamarind and dates and boil till the tamarind is soft and pulpy.
Step 2: Strain the mixture through a soup strainer to remove date seeds and any other tamarind particles.
Step 3: Check for sweetness and add the jaggery accordingly. Check the chutney consistency, if it seems thin then boil for few minutes.
Step 4: Cool the chutney; add roasted cumin powder, red chilli powder and black salt.
Step 5: Transfer to an airtight container. Refrigerate or Freeze for further use.

Step 1: Wash and grind coriander leaves and stalks with rest of the ingredients, using water, to a smooth paste.
Step 2: Taste chutney for salt and hotness. Adjust accordingly.

To assemble the Chaat:
Step 1: Place healthy patties in a serving dish. Make sure they are warm.
Step 2: Generously top with piping hot ragda.
Step 3: Spoon out some imli – khajoor chutney and green chutney over the ragda.
Step 4: Garnish with chopped onion, coriander leaves and generous sprinkle of chaat masala. Serve the chaat immediately.
