There was leftover coconut milk from the Thai green curry last night, so I decided to whip up a nice thick tropical cold soup for the baby. It really is very simple and tastes gorgeous!

Coconut milk:
1. Steep grated coconut in hot water for about 15 mins
2. Strain it through a sieve

Cold soup:
1. Coconut milk
2. Finely puréed Honey melon (one can use; pineapple, musk melons, kiwi fruit or any tropical fruit)

Blend it well and keep the consistency smooth yet dense. Serve cold.
